Let’s be honest—many of us swing by Starbucks (or whatever coffee shop is on our route to work) for that morning pick-me-up. But what we’re really getting is a sugary cup full of artificial syrups and processed ingredients. What if I told you there’s a much healthier, more nourishing way to start your day?

Enter the chocolatey, butterscotchy Walnut Maca Latte.

Now, I say “latte” in quotes because this cozy drink doesn’t contain milk or espresso. Instead, it’s a rich, velvety blend of nuts, maca, maple syrup, and warming spices that delivers a natural energy boost—with zero caffeine crash. It tastes indulgent, but every ingredient is whole and intentional.

Why walnuts?

Personally, I love the deep, slightly bitter creaminess of walnuts. They pair beautifully with maple syrup and give this drink a sweet, nutty and because of the maca powder – butterscotch-like flavor. But feel free to use any nut you have on hand—cashews, pecans, almonds, or hazelnuts all work beautifully. The nuts are what give this “latte” its rich texture and healthy fat content, which helps keep you full and satisfied longer.

How to make it

When blended with water, nuts create a natural nut milk. Add in maca powder, cacao, a splash of maple syrup, and a pinch of salt or spice, and you’ve got a frothy, nourishing drink that’s just as comforting as your favorite latte—without the sugar overload.

If you have a high-speed blender like a Vitamix, you’re in luck: just blend for a few minutes until the mixture is hot and frothy. No heating required. A note on serving

This recipe makes one generous serving, but it’s easy to scale. Just double or quadruple the ingredients depending on how many mugs you’re filling. The recipe is flexible, and you might have to play around with it according to your tastes. For example, if you want it a bit thicker, add more nuts. If you would like it sweeter, adding a date or two is a good way to achieve that while adding extra vitamins – after all, the goal of this drink is to be very nourishing.

    • No Vitamix? No problem. Use any high-powered blender to blend until smooth, then transfer to a saucepan and gently heat on the stovetop. For that foamy latte texture, finish with an electric milk frother.

    • Serve hot — or enjoy it iced by pouring the mixture into glass jars or sealable containers and refrigerating. Just give it a good shake before drinking.
