Collagen-Rich Winter Broth:

Weโ€™re still in the depths of winter, and this is the season when our bodies crave warm broths and deeply nourishing foods more than ever. I make some kind of soup or broth almost every week, and this no-water chicken essence soup has quickly become one of my favorites.

In Eastern food traditions, warm cooked fruits, vegetables, and long-simmered broths are believed to support digestion and help the body conserve energy. This soup embodies that philosophy beautifully โ€” it is hydrating, warming, and incredibly comforting.

As it slowly cooks, the natural juices from cabbage, onion, and apple release and mingle with the collagen and rich juices from the chicken, creating a golden broth without adding a single drop of water. The result is a soup that tastes concentrated, silky, and deeply nourishing.

The chicken becomes meltingly tender, the ginger perfumes the broth, and the apple adds the faintest natural sweetness that makes the soup taste gentle and restorative.

Why This Recipe Is Special.

  • No added water โ€” the broth forms naturally

A Note on Nourishment

Slow-cooked chicken releases natural collagen, gelatin, amino acids, and minerals into the broth. These nutrients are traditionally associated with supporting skin, joints, and digestion.

The apple plays a special role here too. When apples are gently cooked, they release pectin, a natural soluble fiber known to support gut health and digestion. Combined with collagen, this creates a broth that feels soothing, gentle, and deeply nourishing.

Ginger and green onions add warmth and brightness, balancing the richness of the soup.

Ingredient Highlights

Whole Chicken โ€“ Slow cooking a whole chicken releases collagen, gelatin, and minerals that create a silky, nourishing broth.

Napa Cabbage โ€“ Naturally water-rich and mildly sweet, it melts into the broth and provides the liquid base for this no-water soup.

Apple โ€“ Adds gentle sweetness and releases natural pectin, a soluble fiber traditionally associated with gut health.

Ginger โ€“ Warming, aromatic, and balancing to the richness of the broth.

Green Onion โ€“ Adds brightness and a fresh finishing note. Green onions are also thought to warm the body with their sutble spiciness, and also pack a punch of vitamin C.

Frequently Asked Questions

How does soup work without water?
The cabbage, onion, and apple release a surprising amount of natural liquid during slow cooking. Combined with the juices from the chicken, this creates a rich broth without adding water.

Can I add water or broth?
You can, but the beauty of this recipe is the concentrated flavor created without dilution.

What size chicken should I use?
Any 3โ€“5 lb whole chicken works perfectly.

Can I cook this on the stovetop?
Yes. Use the lowest heat possible and cook covered for 3โ€“4 hours.

Why donโ€™t we salt before cooking?
Salt pulls moisture from vegetables too early and prevents the broth from forming naturally.
