Preheat oven to 400ยฐF (204ยฐC).

Prepare the tomatoes.

Place cherry tomatoes on a sheet pan. Toss with olive oil, smashed garlic, salt, pepper, and thyme.

Roast.

Roast for 20โ25 minutes, until tomatoes are blistered and beginning to burst.

If needed, increase heat to 425ยฐF for the last 5 minutes for extra caramelization.

Plate.

Transfer tomatoes to a shallow serving dish using a slotted spoon, then spoon in a small amount of the juices.

Add burrata.

Place burrata in the center.

Finish.

Spoon pesto over the top.

Add fresh basil, flaky salt, and a drizzle of olive oil.
