Pour 1 cup of the tart cherry juice into a medium bowl. Sprinkle the gelatin evenly over the surface. Let sit for 5โ10 minutes to fully bloom and absorb the liquid.

Warm the remaining juice.

In a saucepan, gently warm the remaining 3 cups of cherry juice with the honey and a pinch of sea salt over medium-low heat. Heat until warm and steamy, but do not boil.

Dissolve the gelatin.

Remove the saucepan from heat. Whisk in the bloomed gelatin until completely dissolved and smooth.

Pour the mixture into an 8x8-inch glass dish or silicone mold - or any mold of your choice. As you can see here, I use both a round and square mold for two different aesthetics.ย
